My Hasselback Potatoes


I made this neat looking potato the other night that I found on Pinterest.  I modified the recipe a bit and it turned out super yummy.   The kids got excited about it as well, I think it was the shape.  Not all of my cuts were perfect but since it was just for my fam and not some fancy dinner I didn't care!  You can find the original recipe here.

So here's how to make mine.  Preheat the oven to 425.  Wash however many potatoes you need and pat dry.  Make thin slices in the potato without cutting through it from one end to the other.  Drizzle with olive oil, stuff some freshly minced garlic between the layers while rubbing the olive oil in.  Sprinkle with salt, pepper and chives.  Bake for 40 minutes.   I omitted the butter and added chives in comparison to the recipe at Sea Salt with Food.

I love trying new recipes.  Sometimes its a complete failure.  Rarely is anything inedible but on occasion I've said "nope we're not eating that."  It is so tempting to fall into the same recipe rut but trying new foods and doing something different for dinner is good for the whole family.
