Yes, homemade, which I believe qualifies them for dinner. Another modified for me recipe from my Better Homes and Gardens Cook Book. It's really easy and if you haven't done it before, just try it. It really doesn't take that much longer than making them from a box and they are so yummy. Now the banana part, if you have bananas that are getting past their prime, or have a big bruise then they are perfect (just cut that nasty bruise off). See this little girl? She is ready for some pancakes and wants to help.
Ingredients:
1 cup of all purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1/4 teaspoon of salt (I usually just sprinkle an approx amount in my hand and toss it in)
1 beaten egg
1 cup of milk
2 tablespoons of oil
1 to 2 mushy overripe bananas
Combine the dry ingredients and stir with a fork to distribute evenly. Break your egg into the measuring cup, beat with fork and then add. When you've added everything else mix well with that same fork (I'm all about less dishes). Then take that fork and mush up your bananas add them to the pancake mix and get to cookin'.
Cook them on the griddle and then enjoy your breakfast for dinner. Makes 10-15 pancakes depending on the size. Warning! They will be gone quickly and if you put your plate next to a toddler you will surely lose some of yours, I did.
