Food for Blog: Easy Chicken Quesadillas

So I told you I would give you some recipes to use that leftover chicken with from the Roasted Chicken we made on Monday.  Here you go!  We normally have a breast, wing and thigh left over after 5 people (2 adults and 3 kids) have eaten.  You only need a few more things to make this simple meal.

What you will need:
  • Leftover chicken
  • Picante or hot sauce
  • Shredded cheese
  • Tortillas (I get the 8 pack)
  • Taco Seasoning - about half of a packet (I use McCormick bc I know my kids like it and its not too spicy)
What to do:

Break chicken into bite size pieces and combine with seasoning.  Sprinkle a little water and put in the microwave for about 30 seconds. Stir chicken mixture and add 1-2 tablespoons of picante.  If you have picky eaters who would get a little cranky at seeing bits of pepper in their food you can run it through the food processor or strain it.  Even using a medium hot picante sauce my pickiest eater didn't think it was too spicy.  Add cheese to the bowl and mix well.

Spread mixture onto 4 tortillas and top with the other 4.  They just take a few minutes to brown on each side.  Makes 4 quesadillas.  Now if you have really picky eaters you can always make half just chicken and cheese.  You could also grill some peppers and onions.  They have those great frozen bags of them in the freezer section, no chopping!  Fresh fruit makes a yummy side as well.
