I'm not real big on leftovers. I usually try to only make what we can eat in one sitting. However I have not perfected it and thankfully my husband usually eats most of them. We had one of those nights where our plans did not work out and we had hungry and tired children at 8:30 on a Saturday night. So we drove through KFC and picked up a family pack. We can never eat it all. So Sunday I knew if we didn't use that leftover chicken we never would. So here is my super easy leftover fried chicken salad.
If I had an avocado I would have used it. Bummer. That would have been super yummy. Organic lettuce mix, tomatoes and leftover chicken. Hopefully the organic lettuce will make up for the fact that its KFC. I just tore the meat off and microwaved it for 20 seconds. I added some leftover mac and cheese (two leftovers in one meal is record for me), fresh apple slices and some buttered whole wheat bread. Voila! Lunch for 5 in about 5 minutes. Just the way I like it.
Yumm, looks good, I eat just about everything, my husbands a little picky but since he went into the military he eats almost everything, my daughter however wont touch any kind of vegetable. Its like she has radar for vegetables. She got a carrot cupcake at the mall, and just ate the icing because she new there was vegetables in it, and we didnt even tell her, she also doesnt like syrup on pancakes, or jelly or jam, or corn, I can go on and on.... That is a great idea on KFC...I will try it next time :) Mary A.
